  • 250g self raising flour
  • 50g high quality cocoa
  • 125g soft dark brown sugar
  • 1 tsp vanilla extract
  • 85g fudge chunks
  • 100g white chocolate chips
  • 200ml milk
  • 4tbsp sunflower oil
  • 2 medium eggs
  • 2 tsp baking powder
  • 12 muffin cases

    Method

    • step 1

      Heat oven to 170C. Sieve the flour, cocoa and baking power into a bowl, add the sugar
    • step 2

      In a jug whisk together the eggs, milk, oil and vanilla extract until it is full of bubbles
    • step 3

      Add liquid to dry ingredients and mix together with an electric mixer until smooth, add the chocolate chips and fudge chunks and mix until they are distributed evenly
    • step 4

      Spoon into muffin cases and place on tray in the oven. Cook for 20-30 mins or until firm to touch and tops have split (though they don't always split). Take out of oven and leave to stand on rack for 5-10 mins and then eat warm.

    Easy to make. Light and fluffy but the muffin mix itself is tasteless. Thank goodness for the fudge & chocolate which added some flavour. Would only have been1 star without them

    I do use a very high quality cocoa powder from The Chocolate Trading Company in it which does make all the difference- it’s pricey but I’ve had these muffins described as more chocolatey than chocolate.
