• 500g red split lentils
  • 1 orange pepper
  • 1 tin cherry tomatoes
  • 1 vegetable stock pot
  • 1 clove of garlic
  • A few pieces of chopped chive
  • A sprinkle of chilli seeds
  • 1.5-2 litres boiling water
  • A sprinkle of thyme
  • 3 lemons
  • 1 lime


  • STEP 1
    Chop up the garlic clove into small pieces and add the lentils and the stock pot (without water).
  • STEP 2
    Boil the water and add to the mix in the large saucepan. Mix until the stock pot has dissolved into the water. Turn on the hob to a low heat and keep turned on throughout the making of the soup.
  • STEP 3
    Add the chopped pepper and the tin of tomatoes, mixing so nothing sticks to the pan. Squirt in the lemon and lime.
  • STEP 4
    Add all the herbs and spices, mix in and then blend with a hand blender until smooth.
