An amazing prawn curry that's really easy to make. Needs a blender.

  • 250g Pack of Prawns (works fine with value/basics prawns)
  • 2 tbsp Red Pesto
  • 1 fresh birdseye chilli
  • 1 inch ginger
  • 2 cloves garlic
  • 1 small onion
  • 150ml boiling water


    1. Chop the onion, garlic, chilli and ginger. It doesn't have to be neat as it's all going to be blended.
    2. Fry the Onion, Garlic, Chilli and Ginger in a little oil for 2 minutes.
    3. Add the Red pesto and fry for another 2 minutes
    4. Add the 150 ml boiling water and simmer for 5 minutes
    5. Blend the contents on a medium speed for 30 seconds.
    6. Return blended ingredients to the pan and add prawns. Season with a little salt and pepper and serve with boiled rice.

A wonderfully easy and tasty recipe. I was intrigued by the addition of red pesto, but it made the sauce fuller in flavour. I have to confess that I added a tsp of madras curry paste but only because I wanted to spice it up a little more. It was good without it. Many thanks Alistair.
