  • 680g cooking apples
  • 1/4 pint water
  • juice 1 lemon
  • 340g sugar
  • 2 eggs
  • 113g butter
  • pinch of ground ginger

    Method

    • step 1

      cut apples and simmer in water & lemon juice until pulpy
    • step 2

      sieve
    • step 3

      add sugar eggs and butter
    • step 4

      cook gently until thickened -do not boil- add ginger then pot & cover
