Macadamia nut cookies

  • 225g butter
  • 200g caster sugar
  • 1 egg beaten
  • grated rind and juice of 1 lemon
  • 225g plain flour
  • 1 tsp bicarb soda
  • 100g macadamia nuts, chopped

  • STEP 1
    preheat oven to 190c
  • STEP 2
    Beat together butter and sugar for 5 mins until light and fluffy
  • STEP 3
    beat in egg, then stir in lemon juice and rind
  • STEP 4
    sift in flour and bicarb, carefully stir together then stir in macadamia nuts
  • STEP 5
    drop teaspoons of mixture onto greased baking sheet and bake for 15mins, till golden
  • STEP 6
    dust with icing sugar when cool and serve
