Ingredients

  • 1 Onion
  • 2 Tsp Vegetable Oil
  • 1 Tbsp Medium Curry Powder
  • 4 Chicken Breast
  • 4 Tbsp Natural Yoghurt
  • 1/2 Lemon
  • 1 Mixed Leaf Salad Bag
  • 6 Tortilla Wraps

Method

  • STEP 1
    Peel and finely dice the onion. Heat the oil in a large frying pan and add the onion and then the curry powder, cooking for a minute.
  • STEP 2
    Cube the chicken and add to the pan to coat in the curry powder. Continue to cook over a medium heat for 12-15 minutes, stirring occasionally until the chicken is completely cooked through. Leave to one side to go cool.
  • STEP 3
    Mix together the mayonnaise and yoghurt and add a good squeeze of lemon juice and black pepper to taste. Add in the onions and chicken and stir until everything is coated.
  • STEP 4
    Pack everything separately if taking on a picnic otherwise put on the table for everyone to put together their own!
