Gluten Free Tortillas:

  • 2 c. Gluten Free All-Purpose Flour Mix
  • 1 1/2 tsp. xanthan gum
  • 2 tsp. sugar
  • 1 tsp. salt
  • 1 c. warm water

Pork Fajitas:

  • 350g pork fillet

Marinade for pork:

  • Juice of one lemon
  • 1 tsp caster sugar
  • 1 tsp dried oregano
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper

Veg:

  • 1 carrot sliced thinly
  • 1 corguette sliced thinly
  • 1 pepper sliced thinly

Marinade for veg:

  • 10ml sunflower oil
  • 1 tsp dried coriander
  • juice of half a lemon
  • 1 tsp piri piri spice

You will also need:

  • Parchment paper
  • hot dry frying pan on medium heat
  • rolling pin

Method

  • step 1

    For the wheat free tortillas: Mix dry ingredients together, then mix in the water until you have a supple dough. (I do this with my hands). Meanwhile mix the pork with the marinade and leave to the side.
  • step 2

    Separate the dough into 8 pieces, roll into balls. Use a piece of parchment paper flour it and the rolling pin, roll out a ball until flat, about 1/2cm deep.
  • step 3

    Put the tortilla into the hot dry pan, cook for a couple of minutes each side, or until one side has risen and browned in places. Move the tortilla to a plate and repeat for each ball of dough. (you can heat these later or freeze by separating each tortilla with parchment)
  • step 4

    For the pork fajitas: Mix the marinade with the veg, toss into a wok/frying pan, cook for 3-5minutes. Add the pork and cook til browned. (remember to open a window, the spice will cause a little smoke)
  • step 5

    Add some cooked rice and corn on the cob for those greedy souls.
