Ingredients

  • 1 chopped onion
  • 1/2tsp chopped red chilli
  • 1 sliced carrot
  • 1 sliced celery heart
  • 450g/1lb chopped tomatoes
  • 900g/2lb roasted peppers
  • 1.21/2pt vegetable stock
  • seasoning
  • a little olive oil
  • sour cream to serve and chopped coriander

Method

  • STEP 1
    sweat onion, red chilli, carrot and celery in alittle olive oil for 10 mins
  • STEP 2
    add chopped tomatoes and peppers vegetable stock and seasoning simmer for 20 mins
  • STEP 3
    liquidise and pass through a sieve
  • STEP 4
    serve with sour cream and chopped coriander
