  • 1 chopped onion
  • 1/2tsp chopped red chilli
  • 1 sliced carrot
  • 1 sliced celery heart
  • 450g/1lb chopped tomatoes
  • 900g/2lb roasted peppers
  • 1.21/2pt vegetable stock
  • seasoning
  • a little olive oil
  • sour cream to serve and chopped coriander


    1. sweat onion, red chilli, carrot and celery in alittle olive oil for 10 mins
    2. add chopped tomatoes and peppers vegetable stock and seasoning simmer for 20 mins
    3. liquidise and pass through a sieve
    4. serve with sour cream and chopped coriander
