Roasted Red Pepper Soup

Ingredients
- 1 chopped onion
- 1/2tsp chopped red chilli
- 1 sliced carrot
- 1 sliced celery heart
- 450g/1lb chopped tomatoes
- 900g/2lb roasted peppers
- 1.21/2pt vegetable stock
- seasoning
- a little olive oil
- sour cream to serve and chopped coriander
Method
- STEP 1sweat onion, red chilli, carrot and celery in alittle olive oil for 10 mins
- STEP 2add chopped tomatoes and peppers vegetable stock and seasoning simmer for 20 mins
- STEP 3liquidise and pass through a sieve
- STEP 4serve with sour cream and chopped coriander
