
Gluten-free Welsh Cakes

Ingredients
- Gluten-free Plain Flour 250g
- Butter 100g
- 1 egg
- 1/2 tsp of Xanthan Gum
- 1/2 tsp Baking powder
- 85g Caster Sugar
- 1 tsp Mixed Spice
- 1 tsp Vanilla extract
- a little icing sugar to dust
- Sultanas 50g (or Currants, Raisons etc)
Method
- STEP 1Whisk together Egg, Butter, Sugar, Vanilla extract until all mixed well.
- STEP 2Sift in Flour, Baking Powder, Xanthan Gum & Mixed Spice. Add Sultanas.
- STEP 3Using your hands mix all ingredients well to form a ball of dough. (if still wet add a little extra flour).
- STEP 4Using your hands create small balls (approx 30-40g) , using the palm of your hand flatten to your required thickness. Cook on a medium hot griddle either side for 3 minutes or until golden. Dust with icing sugar.
