Gluten-free Welsh cakes

  • Gluten-free Plain Flour 250g
  • Butter 100g
  • 1 egg
  • 1/2 tsp of Xanthan Gum
  • 1/2 tsp Baking powder
  • 85g Caster Sugar
  • 1 tsp Mixed Spice
  • 1 tsp Vanilla extract
  • a little icing sugar to dust
  • Sultanas 50g (or Currants, Raisons etc)


  1. Whisk together Egg, Butter, Sugar, Vanilla extract until all mixed well.

  2. Sift in Flour, Baking Powder, Xanthan Gum & Mixed Spice. Add Sultanas.

  3. Using your hands mix all ingredients well to form a ball of dough. (if still wet add a little extra flour).

  4. Using your hands create small balls (approx 30-40g) , using the palm of your hand flatten to your required thickness. Cook on a medium hot griddle either side for 3 minutes or until golden. Dust with icing sugar.
