Ingredients

  • handful of frozen peas
  • leftover new potatoes
  • 100g of feta, crumbled
  • 5 eggs
  • tablespoon of Olive Oil

Method

  • STEP 1
    Preheat oven to 200C. Boil the new potatoes for ten minutes until tender, allow to cool, then slice
  • STEP 2
    Beat the eggs as though you were to be making an omlette
  • STEP 3
    Heat the oil in an oven proof frying pan then add the sliced potatoes. Mix the peas and feta together then pour over the sliced potatoes.
  • STEP 4
    Heat until the base is cooked, then pop in the oven for 20-25 mins or until a knife comes out clean when inserted.
  • STEP 5
    Serve and enjoy.
