Frittata with leftovers

Ingredients
- handful of frozen peas
- leftover new potatoes
- 100g of feta, crumbled
- 5 eggs
- tablespoon of Olive Oil
Method
- STEP 1Preheat oven to 200C. Boil the new potatoes for ten minutes until tender, allow to cool, then slice
- STEP 2Beat the eggs as though you were to be making an omlette
- STEP 3Heat the oil in an oven proof frying pan then add the sliced potatoes. Mix the peas and feta together then pour over the sliced potatoes.
- STEP 4Heat until the base is cooked, then pop in the oven for 20-25 mins or until a knife comes out clean when inserted.
- STEP 5Serve and enjoy.
