Frittata with leftovers

  • handful of frozen peas
  • leftover new potatoes
  • 100g of feta, crumbled
  • 5 eggs
  • tablespoon of Olive Oil


    1. Preheat oven to 200C. Boil the new potatoes for ten minutes until tender, allow to cool, then slice
    2. Beat the eggs as though you were to be making an omlette
    3. Heat the oil in an oven proof frying pan then add the sliced potatoes. Mix the peas and feta together then pour over the sliced potatoes.
    4. Heat until the base is cooked, then pop in the oven for 20-25 mins or until a knife comes out clean when inserted.
    5. Serve and enjoy.
