Beautifully Moist Banana Cake

Really nice moist banana cake which is always a hit with anybody coming round for a cup of tea, so much so, I always hide a bit....

  • 450g/1lb of Bananas (better when they are starting to go brown)
  • 255g/9oz of Self-Raising Flour
  • 283g/10oz of Caster Sugar
  • 113g/4oz of Margarine
  • 2 Eggs
  • Few drops of Vanilla Essence
  • 1/2 tsp Bicarbonate of Soda
  • Filling
  • 140g/5oz butter, softened
  • 280g/10oz icing sugar
  • 1-2 tbsp milk
  • Strawberry Jam (Hartleys Best I use)


    1. Preheat oven to 180C/fan
    2. Mash the bananas in a bowl
    3. In a separate bowl, put in the eggs, caster sugar and margarine
    4. whisk or mix for about a min
    5. add flour and bicarbonate of soda and mix
    6. and vanilla and bananas and mix
    7. divide into 2, 15cm round cake tins lined with grease proof paper
    8. Place in oven for 25 mins on middle shelf
    9. When cooked leave for 5 mins to cool before transfering to wire rack to cool completly
    10. Once cooled, mix butter, milk and icing together, once mixed add a nice thick layer to one half and a nice layer of jam to the other half and place together.

I made this today as I had a lot of bananas needing to be used. I am a terrible cake baker but this turned out very well (for me). It is very moist and "bouncy". It's incredibly sweet though. My children don't eat jams so I used chocolate spread instead. Will definitely bake this one again it is going down very well with the smalls.
