Serves 1 - 15 Cakes

Easy and quick. Delicious and fresh. Really what more could you ask for??

  • 8oz self-raising flour,sifted
  • 8oz caster sugar(or vanilla sugar)
  • 8oz unsalted butter,at room temperature
  • 1tsp baking powder
  • 1tsp vanilla extract
  • 4 eggs(free range or organic)
  • 2 cupcake or muffin pans lined with 15 cupcake cases


    1. Preheat oven to 180'c Combine all ingredients in a bowl with an electric mixed until well combined.
    2. Spoon into cases and bake for about 20 minutes or until golden brown and well risen.
    3. Cool on wire rack and then ice with chosen topping. Enjoy!
