  • 1tbsp of coriander seeds
  • 1tbsp tamarind paste
  • 2tbsp olive oil
  • 1tbsp vinegar (rice or apple vinegar are best)
  • 2tbsp sugar or honey
  • 1tsp chilli powder
  • 1/2tsp cayenne pepper
  • 2tbsp soy sauce
  • 1tbsp fish sauce
  • 2 cloves of garlic, crushed
  • 2cm ginger, grated

    Method

    • step 1

      Toast the coriander seeds until aromatic then crush to a powder
    • step 2

      Mix all the other marinade ingredients with the coriander powder
    • step 3

      Coat the chicken wings throughly and leave to sit for at least a half a hour to overnight
    • step 4

      Place chicken wings on a baking sheet lined with parchment or baking paper. Spoon remaning marinade on top of chicken
    • step 5

      Preheat oven to 200 and bake the chicken wings for 30-45 minutes rotating them every 10 to 15 minutes
