Chilli Con Carne

This is my Chilli Con Carne recipe. It works turns out great every time. Perfect for an easy dinner or for batch cooking and freezing. Make sure you weigh everything accurately, to get the perfect flavour balance. Also, make sure to mix the cornstarch mix before adding to the chilli. Hope you enjoy!

Ingredients

Sauce

  • 6g Oil
  • 160g Onion (Diced)
  • 1g Chilli Puree
  • 30g Garlic Puree
  • 90g Tomato Puree
  • 41g Chilli Con Carne Spice Mix
  • 90g Water (1)
  • 500g Minced Beef
  • 12g Fresh Coriander
  • 4g Fresh Oregano
  • 120g Water (2)
  • 280g Chopped Tomatoes
  • 360g Red Kidney Beans
  • 100g Red Pepper (Diced)
  • 130g Cornstarch Mix (40g Cornstarch/90g Water)

Chilli Con Carne Spice Mix (Makes 205g/5 batches)

  • 6g Oil
  • 160g Onion (Diced)
  • 1g Chilli Puree
  • 30g Garlic Puree
  • 90g Tomato Puree
  • 41g Chilli Con Carne Spice Mix
  • 90g Water (1)
  • 500g Minced Beef
  • 12g Fresh Coriander
  • 4g Fresh Oregano
  • 120g Water (2)
  • 280g Chopped Tomatoes
  • 360g Red Kidney Beans
  • 100g Red Pepper (Diced)
  • 130g Cornstarch Mix (40g Cornstarch/90g Water)
  • 75g Brown Sugar
  • 50g Salt
  • 60g Cumin
  • 5g Paprika
  • 15g Chilli Powder
  • Combine and mix well

Method

  • STEP 1
    Brown the minced beef in a little oil (about 5 minutes), and put aside.
  • STEP 2
    Heat the oil (6g) in a large saucepan. Fry the onions over a medium heat until softened. About 5 minutes.
  • STEP 3
    Add the chilli, garlic and tomato puree to the pan. Mix and cook for 1 minute.
  • STEP 4
    Add the chilli con carne spice mix and water (1) to the pan. Mix and cook for 2 minutes.
  • STEP 5
    Add the browned minced beef to the pan. Mix and cook for 1 minute.
  • STEP 6
    Take the pan off the heat. Add water (2), fresh coriander, oregano and chopped tomatoes. Mix, return to the heat and cook for a further minute.
  • STEP 7
    Add the kidney beans and red pepper. Mix and cook for 1 minute.
  • STEP 8
    Add the cornstarch mix. Heat for 1 minute while stirring.
  • STEP 9
    Turn the heat down to a medium low heat. Cook gently for 15 minutes, stirring occasionally and adding water till you reach the desired consistency.
