  • For the cake
  • 170g butter, softened
  • 340g caster sugar
  • 3 tsps vanilla essence
  • 3 eggs , lightly beaten
  • 170g self-raising flour
  • 55g plain flour
  • 3 tbsps cocoa powder
  • 11 floz milk


    1. Place butter, sugar and vanilla essence in a bowl and beat until light and fluffy. Gradually beat in the eggs.
    2. Sift together the flours and cocoa powder. Fold the flour mixture and the milk, alternately, into the butter mixture.
    3. Pour the mixture into a greased and lined 22cm square cake tin and bake for 55 minutes or until the cake is cooked when tested with a skewer at oven temperatures 190C, 375f, gas 5.Stand the cake in the tin for 10 minutes before turning onto a wire rack to cool.

Made this cake and it looked fine when removed from oven. Looked at it after it had cooled and it had deflated by about about inch. Haven't tasted it yet. Well have tried it now and it was a disaster! The deflated top was lovely but the bottom half was solid like bread pudding. What went wrong :-(

Pound cake traditionally has equal parts (1lb as it happens) of the four base ingredients. This is a good recipe... But it would be more apt to call it just "chocolate cake".

This cake is delicious.I first made it with a special someone with the same ingredients as the recipe, but today I made it with a little but more cocoa which made it dark choclaty. loved it. Thank you sasha.

lovely recipe, at first i was worried about the amount of milk needed. Thought it wouldn't set or rise or something, but it did. Lovely taste, perfectly easy recipe, will use again. Thank you.

What made my cake deflate? I cooked in an 8" round tin and a fan oven at 170 degrees. Checked after 1hr but wasn't done. Then checked every 15 mins so door opened perhaps another 3 times before it was done..
