Julienne the carrot, cabbage and bell pepper and mix into mayonnaise, adding in the necessary seasonings. Keep in the refrigerator.

Wash the banana and pat the peel dry.

Take a spoon and scrape out the white part on the inside of the banana.
- STEP 4
Now using a fork, shred the peels until they look like long strands of noodles!

Add in the ingredients for the banana peel, excluding the salt and barbecue sauce to marinate the peel and mix well.
- STEP 6
In a pan, add some olive oil and put in the peel which should be cooked for about 1:30 minutes after which you add in the barbecue sauce and salt to taste.

The peel should be cooked perfectly in about 2:30- 2:45 minutes and then remove from the gas. Cooking it for too long will make the peel mushy so remove when you feel its done, you could taste in between!
- STEP 8
For the chipotle crema, add all ingredients into a blender and blend to form a sauce.
- STEP 9
Take a burger bun, add in the chipotle sauce, some lettuce, banana peel and the veggie slaw. Enjoy!
