- Spinach (pre chopped frozen is best)
- 2 green chillies
- New Potatoes - boiled with 1tsp turmeric & pinch of cumin seeds)
- 1 large onion chopped
- 2 tbsp cocunut oil
- 10 cherry tomatoes halved
- 4 garlic cloves
- 1 inch fresh ginger - matchsticked

Method
step 1
Cook potatoes with added cumin seeds, turmeric and gingerstep 2
Cook onions in the coconut oil & bit of salt. Make sure onions are soft but not burnedstep 3
Add tomatoes, ginger, garlic and chillies and cook till tomatoes break downstep 4
add spices and stir throughstep 5
add spinachstep 6
Fold in potatoes
