Ingredients
- Spinach (pre chopped frozen is best)
- 2 green chillies
- New Potatoes - boiled with 1tsp turmeric & pinch of cumin seeds)
- 1 large onion chopped
- 2 tbsp cocunut oil
- 10 cherry tomatoes halved
- 4 garlic cloves
- 1 inch fresh ginger - matchsticked

Method
- STEP 1Cook potatoes with added cumin seeds, turmeric and ginger
- STEP 2Cook onions in the coconut oil & bit of salt. Make sure onions are soft but not burned
- STEP 3Add tomatoes, ginger, garlic and chillies and cook till tomatoes break down
- STEP 4add spices and stir through
- STEP 5add spinach
- STEP 6Fold in potatoes
