Ingredients

  • Spinach (pre chopped frozen is best)
  • 2 green chillies
  • New Potatoes - boiled with 1tsp turmeric & pinch of cumin seeds)
  • 1 large onion chopped
  • 2 tbsp cocunut oil
  • 10 cherry tomatoes halved
  • 4 garlic cloves
  • 1 inch fresh ginger - matchsticked

  • 1 tsp cumin seeds ground

Garnish

  • Fresh red onion rings
  • Chopped coriander

Method

  • STEP 1
    Cook potatoes with added cumin seeds, turmeric and ginger
  • STEP 2
    Cook onions in the coconut oil & bit of salt. Make sure onions are soft but not burned
  • STEP 3
    Add tomatoes, ginger, garlic and chillies and cook till tomatoes break down
  • STEP 4
    add spices and stir through
  • STEP 5
    add spinach
  • STEP 6
    Fold in potatoes
