Ingredients
- 12 oz mixed dried friut
- 8 oz muscavado sugar
- 1 cup of strong hot tea with a splash of milk
- 10 oz self raising flour
- 1 egg beaten
Method
- STEP 1measure out the fruit and the sugar and soak in the cup of tea and leave for at least 8 hours i.e overnight
- STEP 2after soaking add the flour and the beaten egg mix thoroughly
- STEP 3grease a loaf tin or line with foil add the mixture and cook on gas mark 1 / 2 for 1hour and 30 minutes add an extra 15 minutes if needed
- STEP 4allow to cool and serve sliced with butter
