Quick and easy risotto

  • 1/2 tbsp olive oil
  • 1 onion
  • 250g leek
  • 2 garlic gloves
  • 100g chorizo
  • 300g arborio rice
  • 1 chicken stock cube
  • 240g spring green
  • 1/2 lemon


  1. Preheat oven to 180c. Heat oil in a casserole dish. Add the onion, leeks, garlic and chorizo. Fry for 8-10minutes. Increase the heat to high, and add the rice and stir for 2-4mins.

  2. Pour in the stock (1 litre). Stir and cover. Transfer to the oven and bake for 20mins or until all the liquid has absorbed.

  3. Stir through the greens and lemon juice, season and mix. Replace the lid and leave to stand for 5 mins until greens have wilted.
