Chorizo and doing onion risotto

- 1/2 tbsp olive oil
- 1 onion
- 250g leek
- 2 garlic gloves
- 100g chorizo
- 300g arborio rice
- 1 chicken stock cube
- 240g spring green
- 1/2 lemon
Method

Preheat oven to 180c. Heat oil in a casserole dish. Add the onion, leeks, garlic and chorizo. Fry for 8-10minutes. Increase the heat to high, and add the rice and stir for 2-4mins.step 2
Pour in the stock (1 litre). Stir and cover. Transfer to the oven and bake for 20mins or until all the liquid has absorbed.step 3
Stir through the greens and lemon juice, season and mix. Replace the lid and leave to stand for 5 mins until greens have wilted.
