• 1/2 tbsp olive oil
  • 1 onion
  • 250g leek
  • 2 garlic gloves
  • 100g chorizo
  • 300g arborio rice
  • 1 chicken stock cube
  • 240g spring green
  • 1/2 lemon


  • STEP 1
    Preheat oven to 180c. Heat oil in a casserole dish. Add the onion, leeks, garlic and chorizo. Fry for 8-10minutes. Increase the heat to high, and add the rice and stir for 2-4mins.
  • STEP 2
    Pour in the stock (1 litre). Stir and cover. Transfer to the oven and bake for 20mins or until all the liquid has absorbed.
  • STEP 3
    Stir through the greens and lemon juice, season and mix. Replace the lid and leave to stand for 5 mins until greens have wilted.
