Hummus
- 1 Cup (128g) dry chickpeas
- 1 tsp bicarbonate of soda
- 1tsp salt
- 1/2 lemon juice
- 1 1/2 tbs tahini
- 2 cloves garlic
- 1/6 cup (40ml) olive oil
Finishing Touches (optional)
- 1 Cup (128g) dry chickpeas

- 1 tsp smoked paprika
- 2 stems parsley chopped finely
Method
step 1
Soak the dry chickpeas overnight in a saucepan.step 2
Add the bicarbonate of soda to the soaked peas and boil for 50 mins until soft. Drain them but save 1/4 cup of cooking water.step 3
Crush garlic then add chickpeas and all remaining ingredients into a blender. Blend till smooth. If mixture too dry add extra cooking water (normal water fine).step 4
(Optional to finish) Drizzle hummus with olive oil, add a shake of smoked paprika and sprinkle some chopped parsley on top.
