Hummus

  • 1 Cup (128g) dry chickpeas
  • 1 tsp bicarbonate of soda
  • 1tsp salt
  • 1/2 lemon juice
  • 1 1/2 tbs tahini
  • 2 cloves garlic
  • 1/6 cup (40ml) olive oil

Finishing Touches (optional)

  • 1 Cup (128g) dry chickpeas
  • 1 tsp bicarbonate of soda
  • 1tsp salt
  • 1/2 lemon juice
  • 1 1/2 tbs tahini
  • 2 cloves garlic
  • 1/6 cup (40ml) olive oil
  • 1 tbs of olive oil
  • 1 tsp smoked paprika
  • 2 stems parsley chopped finely

    Method

    • step 1

      Soak the dry chickpeas overnight in a saucepan.
    • step 2

      Add the bicarbonate of soda to the soaked peas and boil for 50 mins until soft. Drain them but save 1/4 cup of cooking water.
    • step 3

      Crush garlic then add chickpeas and all remaining ingredients into a blender. Blend till smooth. If mixture too dry add extra cooking water (normal water fine).
    • step 4

      (Optional to finish) Drizzle hummus with olive oil, add a shake of smoked paprika and sprinkle some chopped parsley on top.
