Mikki's Tabouli Salad

Ingredients
- 1 cup bulgar wheat
- 1 cup boiling water
- 1 medium tomato, chopped into bitesize pieces
- 1 cucumber peeled & chopped into small pieces
- 2 spring onions finely chopped
- 1/4 bunch parsley chopped fine
- 1/4 bunch mint chopped fine
- 3 tbsp Olive oil
- 3 tbsp lemon juice
- Pinch salt
Method
- STEP 1Boil water, stir in the Bulgar Wheat cover & stand for 15 minutes. Fluff with a fork
- STEP 2Meanwhile, chop the vegetables, herbs & add to cooled bulgar wheat
- STEP 3Whisk the lemon juice, Olive oil & salt together then pour over bulgar wheat, and toss
- STEP 4Store to cool or serve immediately
