Beanotto with Spinach

Ingredients
- Extra virgin olive oil
- I large onion finely chopped
- 2 gloves garlic finely chopped
- 100g mushrooms (oyster work well but any will do)
- 120ml white wine
- 250g spinach
- 1 can cannellini beans
- 120ml stock
- 1 Tbsp nutritional yeast flakes (vegan) or grated parmesan
- grated zest and juice of half a lemon
- handful of fresh thyme leaves or a teaspoon of dried
- salt and pepper
- Marscapone - optional
Method
- STEP 11. Fry the onions and then add the garlic and mushrooms 2. Add stock and white wine and spinach and beans (plus any leftover green veg) 3. Cook for a few minutes 4. Finish with lemon, thyme, cheese, salt and pepper 5. Remove from heat, add marscapone if using 6. Add stale sourdough or garlic bread
