• Extra virgin olive oil
  • I large onion finely chopped
  • 2 gloves garlic finely chopped
  • 100g mushrooms (oyster work well but any will do)
  • 120ml white wine
  • 250g spinach
  • 1 can cannellini beans
  • 120ml stock
  • 1 Tbsp nutritional yeast flakes (vegan) or grated parmesan
  • grated zest and juice of half a lemon
  • handful of fresh thyme leaves or a teaspoon of dried
  • salt and pepper
  • Marscapone - optional


  • STEP 1
    1. Fry the onions and then add the garlic and mushrooms 2. Add stock and white wine and spinach and beans (plus any leftover green veg) 3. Cook for a few minutes 4. Finish with lemon, thyme, cheese, salt and pepper 5. Remove from heat, add marscapone if using 6. Add stale sourdough or garlic bread
