Quick and Easy Lentil Salad

Ingredients
- 1 400g can brown lentils
- 1/4 cup extra virgin olive oil
- 1/2 tsp smoked paprika
- 1/2 tsp dried mint
- 1/2 tsp dried thyme
- 2 tsp brown sugar
- 2 tbsp red wine vinegar
- 1 tbsp balsamic vinegar
- 1 tsp whole grain mustard
- pinch sea salt
- pinch white pepper
- 1/2 minced red sweet pepper
- 1-2 tbsp fresh parsley
- optional: finely chopped onion or garlic
Method
- STEP 1Drain can of lentils into a sieve and rinse with water.
- STEP 2Mix everything but the lentils, red pepper, and parsley in a jar and shake vigorously for 30 seconds.
- STEP 3In a bowl, pour dressing over lentils and stir together with red pepper and parsley. Feel free to add some crushed garlic or onion.
