• 1 400g can brown lentils
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried mint
  • 1/2 tsp dried thyme
  • 2 tsp brown sugar
  • 2 tbsp red wine vinegar
  • 1 tbsp balsamic vinegar
  • 1 tsp whole grain mustard
  • pinch sea salt
  • pinch white pepper
  • 1/2 minced red sweet pepper
  • 1-2 tbsp fresh parsley
  • optional: finely chopped onion or garlic


  • STEP 1
    Drain can of lentils into a sieve and rinse with water.
  • STEP 2
    Mix everything but the lentils, red pepper, and parsley in a jar and shake vigorously for 30 seconds.
  • STEP 3
    In a bowl, pour dressing over lentils and stir together with red pepper and parsley. Feel free to add some crushed garlic or onion.
