  • 450g courgette
  • 3tbsp olive oil
  • 375g pack puff pastry ready rolled
  • 2 medium eggs
  • 2tbsp creme fraiche
  • 75g gruyere, grated
  • 2 garlic cloves, crushed
  • 4tbsp chopped parsley
  • 50g bread crumbs


    1. Preheat oven to 180oC. Place courgettes on baking sheet, drizzle with oil and roast for 8mins
    2. Transfer courgettes to sheet of grease proof paper and set aside unwashed tray
    3. Roll out pastry to 30.5cm2 and place on baking sheet
    4. Whisk 1 egg with the creme fraiche. Add 50g cheese and garlic and parsley. Season.
    5. Arrange courgettes on middle of the pastry. Pour egg mix over the top. Scatter crumbs and remaining cheese over top. Gather up the sides to create a rim. Chill 10mins. Brush pastry with other egg and bake for 30mins

Made this recipe hundreds of times always goes down well .we eat it with a green salad our guests always love it.
