FOR THE SPICE RUB

  • 1 tbsp mustard powder
  • 1 tbsp ancho chilli powder
  • 1 tbsp chipotle in adobo
  • 1 tbsp soft brown sugar
  • 4 short racks baby back pork ribs about 1kg

FOR THE CHIPOTLE HONEY GLAZE

  • 3 tbsp chipotle
  • 1 tbsp cider vinegar
  • 4 tbsp clear honey
  • 2 tbsp ketchup

    Method

    • step 1

      Heat oven to Gas 5 190C/170C fan
    • step 2

      Add spice rub ingredients in a small bowl with seasoning. Rub into meat and place in a single layer on a baking tray. Pour 125ml water into the bottom of the tray cover with foil and cook for 1.5 hours until tender. In meantime mix glaze ingredients.
    • step 3

      Remove foil and pour off liquid. turn oven up to gas 7 220C/200C fan. Brush ribs with glaze and cook for further 10 mins until glaze is sticky.
