Ingredients
- 450g waxy potatoes
- Red onion
- Red pepper
- Cooked bacon
- Mushrooms
- Olive oil
- Frozen peas
- 6 large eggs
- Grated cheese
Method
- STEP 1Peel & cube potatoes. Cook until soft Peel & chop onion Deseed & chop pepper
- STEP 2Heat oil in large frying pan Fry onion, pepper & peas Transfer to plate
- STEP 3Heat oil in pan & add the cooked potatoes for 8 minutes, stirring. Beat the eggs & cheese & season. Return the onion mixture & cooked bacon to pan. Reduce heat & pour over the eggs
- STEP 4Cook over a low heat for 10 minutes or until eggs are set
