  • 450g waxy potatoes
  • Red onion
  • Red pepper
  • Cooked bacon
  • Mushrooms
  • Olive oil
  • Frozen peas
  • 6 large eggs
  • Grated cheese

    Method

    • step 1

      Peel & cube potatoes. Cook until soft Peel & chop onion Deseed & chop pepper
    • step 2

      Heat oil in large frying pan Fry onion, pepper & peas Transfer to plate
    • step 3

      Heat oil in pan & add the cooked potatoes for 8 minutes, stirring. Beat the eggs & cheese & season. Return the onion mixture & cooked bacon to pan. Reduce heat & pour over the eggs
    • step 4

      Cook over a low heat for 10 minutes or until eggs are set
