  • 170g caster sugar
  • 170g butter
  • 2 eggs (lightly whisked)
  • zest of 1 lemon
  • 170 self raising flour


  • 110g caster sugar
  • juice of 1 lemon


  1. Preheat oven to 180 C/ gas mark 4/ 160 C fan and line or grease 23x33cm (9x13in) baking tray

  2. Beat 170g caster sugar with the butter till smooth and creamy

  3. Add eggs and lemon zest and mix till smooth

  4. Fold in flour and bake for around 40 minutes or until golden and skewer inserted into the centre comes out clean

  5. To make the drizzle mix the 110g caster sugar and lemon juice thoroughly and pour evenly over the cake while the cake is still hot from the oven

This cake came out so light and fluffy and absolutely gorgeous. I should maybe have checked it after 30mins as the edges caught. It didnt sink either like most of the cakes Im doing atm! One small thing I would change - use the zest of two lemons, not just one. I could taste the lemon a bit but for my own personal taste, it could do with being a bit more lemony I will definitely be doing this again!!! It would have got 5 stars, but I took one off for the lack of lemon taste!
