Ingredients
- 250g/ 10oz plain flour + a little extra for later
- 200g/ 8oz butter (either kind just not margarine)
- a pinch of salt
- 1 1/2 tsp cinnamon
- 1 1/2 tsp nutmeg
- 1 1/2 tsp mixed spice
- 1 1/2 tsp ground ginger
- 50g/ 2oz caster sugar
- 50g/ 2oz brown sugar
- 1 tsp baking soda
- 1cm length ginger
- 5 tbsp golden syrup

- 1 1/2 tsp mixed spice
- 1 1/2 tsp ground ginger
- 50g/ 2oz caster sugar
- 50g/ 2oz brown sugar
- 1 tsp baking soda
- 1cm length ginger
- 5 tbsp golden syrup
- 1 tsp mixed spice
- 1 tsp ground ginger
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp cocoa powder
Method
- STEP 1preheat the oven to 190 degrees/ 180 degrees fan oven or gas mark 4
- STEP 2sift the flour, salt, cinnamon, nutmeg, mixed spice,sugars and ground ginger to a large mixing bowl
- STEP 3peel the chunk of ginger, then with a garlic press, press the ginger or cut the ginger finely, the add to the bowl
- STEP 4melt together the golden syrup and butter
- STEP 5allow to cool for 5-10 minutes before adding to the dry mixture, stir to make a dough ball
- STEP 6wrap up and stiffen for 30 minutes
- STEP 7after 30 minutes cut the dough into small chunks
- STEP 8lightly cover the biscuits with the powder mix
- STEP 9bake for 10 mins then allow to cool
