- Beef Shin with bone
- 1 large leek
- 2 Carrots
- 3 Sticks Celery
- 2 Potatoes
- 500mls Vegetable (or beef if you prefer) stock
- 2 handfuls barley soup mix
- Water to top off
- Knob of butter
- 1 tsp coriander, salt and pepper
Method
step 1
Melt the butter in a big pot and brown the meat on either side for a minute. Remove from the heat and add the barley soup mix.step 2
Add the chopped leek, carrots, celery and potatoesstep 3
Add the vegetable stock and top off with water to cover the ingredientsstep 4
Add the coriander, salt and pepperstep 5
Bring to the boil then simmer for two hours stirring every ten minsstep 6
Remove the beef, pull apart with 2 forks and add back to the soupstep 7
Serve with crusty bread and a glass of milk
