• Beef Shin with bone
  • 1 large leek
  • 2 Carrots
  • 3 Sticks Celery
  • 2 Potatoes
  • 500mls Vegetable (or beef if you prefer) stock
  • 2 handfuls barley soup mix
  • Water to top off
  • Knob of butter
  • 1 tsp coriander, salt and pepper


  • STEP 1
    Melt the butter in a big pot and brown the meat on either side for a minute. Remove from the heat and add the barley soup mix.
  • STEP 2
    Add the chopped leek, carrots, celery and potatoes
  • STEP 3
    Add the vegetable stock and top off with water to cover the ingredients
  • STEP 4
    Add the coriander, salt and pepper
  • STEP 5
    Bring to the boil then simmer for two hours stirring every ten mins
  • STEP 6
    Remove the beef, pull apart with 2 forks and add back to the soup
  • STEP 7
    Serve with crusty bread and a glass of milk
