Simple & easy to make soup with basic ingredients

  • 1 Large sweet potato, peeled and diced
  • 2 Medium leeks, washed and sliced
  • 25g Butter
  • 600ml Stock, either chicken or vegetable
  • Ground black pepper
  • optional 4 Rashers of bacon


    1. Saute the leeks for 4 minutes in the butter. Add the stock and sweet potato and bring to the boil. Simmer for 15 minutes, or until the sweet potato is cooked.
    2. Season the mixture with black pepper, remove from the heat and allow to cool.
    3. Place the cooled soup into a food processor, and liquidise until smooth.
    4. Return the soup to the pan and bring back to the boil, adding any extra water as necessary to thin the soup to the required consistency.
    5. If desired, grill the bacon until crispy, and cut into bite sized pieces.
    6. Place the soup into the serving bowls and sprinkle the bacon pieces over the top.

I add 2 small red chilli's finely chopped and placed in with the butter & Leeks to sauté. Also another good alternative to butter is coconut oil it gives a really nice flavour to the soup.

So easy to make and doesnt take much prep time at all, I halved the ingredients as I made it for myself only. For such a simple recipient it has an incredible tastetaste, will be making this a lot more.

Very simple and tasty. I used paprika the 2nd time I made it as I had run out of black pepper & it was delicious.

Very nice I added some fresh Thyme with the leeks. Gave it a nice flavour

Nice and wintery, I might try adding something spicy next time just because it's very rich and creamy!

I added a pinch of dried hot chillies and a spoonful of plain, fat free yogurt - quick and delicious!
