  • 2 x 400g cans black beans, drained and rinsed
  • 35g sachet fajita seasoning of your choice
  • 2 x 400g cans chopped tomatoes with chilli
  • 6 tortillas

  • 140g Monterey Jack cheese or cheddar, grated


  1. Heat oven to 180C/160C fan/gas 4. Heat a non-stick frying pan, add the black beans and fajita spice mix, stir together and cook for 1-2 mins. Add the tomatoes and simmer over a low heat for 10 mins.

  2. Cut the tortillas in half. Lightly grease a 2-litre baking dish. Spread a third of the bean mixture over the base of the dish, followed by 3 tbsp of the cheese and a layer of tortillas. Repeat the process, finishing with a tortilla layer on top. Sprinkle over the remaining cheese. Bake for 15 mins until golden.

As easy as it is delicious. I bulked it out with some pork mince and added a layer of cheesey nachos for 3 minutes at the end. Very moreish.

This was really good! I added an onion and only used one can of tomatoes.

I softened an onion and a red and green pepper before adding the spices etc to bulk it out and give more texture, and sprinkled fresh coriander on top at the end. My family were more than happy with this on "meat free Monday"!

A successful and quick meal perfect for the family. Add sour cream and guacamole on the side for more flavour.

Really nice and quick. Used 250g of mixed mozzarella and red cheddar. Made enough for 6 portions when served with a side salad

2nd time of making this delicious dish. Husband loves burritos but now prefers this. used quorn mince rather than Turkey as having a veggie week !
