  1. Heat grill to medium and line the grill pan with foil. Beat the egg white on a plate with a little salt and pepper. Tip the Parmesan onto another plate. Dip the chicken first in egg white, then the cheese. Grill the coated chicken for 10-12 mins, turning once until browned and crisp.

  2. Meanwhile, boil the potatoes for 10 mins, adding the peas for the final 3 mins, then drain. Toss the vegetables with the spinach leaves, vinegar, oil and seasoning to taste. Divide between four warm plates, then serve with the chicken.

Made this a couple of times now, always to recipe, so straightforward & always goes down well. I plate up my 4 year olds dinner before the white wine vinegar goes in & have also blended a portion up with a little water to loosen (again before the white wine vinegar) for my 7 month old. Winner! :)

The Chicken with Parmesan was a lovely combination. For us, the peas with potatoes was too heavy! We felt more Spinach would make for a much more pleasant meal. Tasty and easy as a starting to our Goodfood collection

I added breadcrumbs with the Parmesan, really nice but i think it needs double dipping for the coat- lovely tea though.

I used a combination of parmesan and breadcrumbs which gave a better crunch than parmesan alone might have. Maybe the chicken breasts I used were just big, but it did take about 45 minutes in my electric grill. Maybe next time cooking with a metal skewer through the middle might help the inside cook through. Overall result was good though, if you have extra time to spare.

I only had thighs, so did those and it was lovely, although did not crisp up as I had imagined. Will leave longer next time. Very juicy. I did steamed, carrots, parsnips, broccoli and leeks with melted butter and grated nutmeg. It all seemed to go together beautifully. It was just a Friday night after a buckshee day off. Lovely all round.

I tried this recipe today for the chicken and it was delicious. I had the chicken with rice and beans instead of potato and I diced the chicken as well and mixed it in with the rice. I will definitely be making this again!

really tasty result! the chicken was succulent and the parmesan was a nice mild flavour. I didn't have spinach or new potatoes, so I just boiled some broccoli with the peas!

This was really tasty! But I made my own dressing using 2 tablespoons of pesto and a little olive oil. Yum!
