Native to tropical America, papayas are a large fruit also known as paw-paws. They have vibrant…

  • 1 small red onion, chopped
  • ½ green pepper, deseeded and chopped
  • ½ red pepper, deseeded and chopped
  • 1 red chilli (deseeded if you don't like it too hot), finely chopped
  • 2 tbsp roughly chopped coriander
  • juice 1 lime, plus 1 lime cut into wedges to serve

The same shape, but smaller than…

  • 4 nests medium egg noodles
  • 4 boneless, skinless salmon fillets
  • 1 tbsp vegetable oil
  • 2 tbsp teriyaki sauce
  • 4 large handfuls mixed salad leaves

Method

  1. To make the salsa, combine the papaya, onion, green and red peppers, chilli, coriander and lime juice in a bowl. Season and set aside.

  2. Prepare the noodles following pack instructions. Meanwhile, brush both sides of the salmon fillets with oil, then season. Heat a griddle or frying pan to medium-hot and cook the salmon for 3-4 mins on each side, then remove from the pan. (Alternatively, cook the fillets on a barbecue, and pop the lime wedges next to them, flesh-side down, for 2-3 mins.) Drain the noodles and toss with the teriyaki sauce.

  3. Pile the salad leaves and noodles onto plates. Top with the salmon, spoon over the salsa and serve with a lime wedge.

Really tasty - will make this again. Made my own teriyaki sauce using stuff i already had (ginger, garlic, soy sauce, mirin & honey). Only real change i'd make is to use less onion next time, but that's a personal preference. I'd also use the whole of each pepper.

Great dish, will definitely repeat! Good combination of flavours that complimented each other very well. I put some teriyaki sauce on the top of the salmon only which crisped up nicely in the pan. An easy meal to prepare and cook with minimal pots and pans. You could swap out the noodles out and replace with rice as an alternative

I made this for dinner last week and it will now become a firm favourite. My husband and I really enjoyed the combination and it was so easy to make. I didn't use green pepper as we find it hard to digest, but put an orange one instead. The flavours were lovely.

I can't easily get hold of papaya... Is there anything else I could substitute in that would be similar?

Hi there. Fresh mango or peach would make a good substitute for the papaya.

I don't think I can easily get my hands on papaya... Is there something more readily available that I could substitute it for?
