A quick and easy heart warming veggie recipe

  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 tbsp crushed basil
  • 1 can chopped tomatoes
  • 1 green pepper deseeded and roughly sliced
  • 1 onion roughly chopped
  • 2 mushrooms roughly chopped
  • 4 white potatoes chopped into small chunks
  • 300ml of hot vegetable stock
  • salt and pepper to season
  • pack of vegetable sausages (4-6)


    1. Add the oil to a large frying pan or wok, then add your chopped mushrooms, peppers, onions and potatoes, fry for 5 minutes.
    2. In the meantime preheat the oven to 190C
    3. Once the veg starts to soften add your hot veg stock and a tbsp of basil along with some salt and pepper. Stir in all ingredients and simmer for 3 minutes
    4. Now add your sausages in the oven for 5 minutes then turn the sausages and cook for a further 5 minutes
    5. Add the chopped tomatoes to the pan and stir ina final tbsp of basil along with another small shower of salt and pepper. Take out sausages and chopped into small chunks and add to the pan.
    6. Add a dash of lemon juice and stir all the mix to ensure sauce is mixed in with veg and sausages. Reduce heat and simmer for 10 minutes
    7. I had this on its own but due to the lovely sauce that this creates I believe it would be lovely with a choice of rice, mash potato or a nice French stick. Enjoy

Did not follow exactly- didn't use fresh basil instead used 'mixed herbs'. Will cook again with real basil as I feel this will taste better. I used less potato than advised since our pot was not very large. Would recommend adding carrots and celery next time.

This was great! I used Linda McCartney sausages, and as I didn't have any potatoes I swapped in carrots and added a bit of cornflour in with the tomatoes to thicken it a bit. I also threw in a couple of handfuls of kale I had left in the fridge and it was delicious.

Made exactly as instructed, added a splosh of red wine not because it needed it but because I have some undrinkable stuff I won which is gradually leaving via the cooking pot. This will become a regular lunch.

Absolutely delicious! Made this with veggie sausage and cooked some extra meat ones for the family! Loved it!!

Definite fan of this recipe, it is really full bodied and packs a punch that will satisfy any dinner table! I added a couple of crushed garlic cloves and swapped sweeter red peppers for green. The sauce this recipe makes is amazing! I also didn't chop the potatoes small enough so they were a bit hard, next time I'll be sure to dice them into small squares.

I gave this 5 stars!! It's delicious done exactly as stated. You can use frozen hash browns for the potatoes, add more mushrooms (bella) -- don't forget the lemon, makes a tremendous difference! This is gonna knock your socks off! I topped mine with hemp and pumpkin seeds to make it look prettier. Use the best ingredients your purse can buy :D

This is a lovely, simple recipe and will become one of our staples. It tasted so good before adding the chopped tomatoes that I left them out and it was great that way too. My carnivorous boyfriend asked for seconds :) Served with nice french bread!

This was delicious! A real winter warmer. I used the Linda McCartney sausages with red onion and rosemary. I omitted the potato and just let it reduce a little longer. Served it with big chunks of tomato and herb bread. Will definitely make again!

Added some garlic, chilli paste, extra mushrooms and a red pepper instead of green! Tasty!

A couple of garlic cloves placed in with the other vegetables will add a wonderful taste to the sauce!
