  • 8 oz dried mixed fruit
  • 8 oz self raising flour
  • 4 oz caster sugar
  • 1 mug hot black tea
  • 2 tablespoons of treacle or marmalade
  • 1 egg

    Method

    • step 1

      Tip fruit into bowl and pour over hot tea. Cover and set aside for 20 minutes.
    • step 2

      Once tea has been absorbed into fruit then mix together
    • step 3

      flour, egg, marmalade or treacle if using and sugar. Stir in all fruit and any leftover tea.
    • step 4

      Pour into a lined loaf tin and bake for 1 hour at 180 degrees. Test with a skewer. If it comes out clean it is done if there is mix on it leave for another 5 mins before checking again.
    • step 5

      Serve warm or cold with butter.

    I have made this tea bread many times, always moist and well risen. Quick and easy, just remember to soak the fruit overnight! Never lasts long in our house!

    Made this a few times, easy to make and tastes great. My fruit sinks to the bottom of the cake, any tips to get the fruit to stay mixed in the bake? I've tried different sized fruit, and less time soaking in the tea.

    I have made this cake regularly and it is really lovely and very easy to make. It is a great option for those who need something dairy free. As I wasn't sure about how much a "mug" constituted, I played around with volumes and 10 fl.oz. works well for me.

    I have just made this tea loaf and followed the recipe. The result is awful. The loaf has NOT risen and seems like it is still raw.
