Ingredients

  • 400g can cannellini bean

    Slightly kidney-shaped with squarish ends, cannellini beans are from Italy and are creamy white…

  • 200g feta cheese
  • 1 tbsp lemon juice
  • 1 garlic clove, crushed
  • 3 tbsp chopped dill, mint or chives (or 1 tbsp each)

Method

  1. Drain and rinse beans. Tip into a food processor with feta, lemon juice and garlic, and whizz until smooth. Add dill, mint or chives, and season with pepper.

Yum. Made exactly according to recipe to go with salad for supper (carnivore OH was having a pork chop). All good.

I also used butter beans and lime juice as I had no lemons, I also used three fat garlic cloves as I think the more garlicky the better! Absolutely delicious !

I used butter beans and a hand blender and it was delicious. It took a bit of effort with the hand blender but well worth it.
