Method

  1. dice chilli and prepare the veg and the chicken, slice the sausage into tin slices
  2. Heat oil up in a large none stick pot & add chilli & cook for 1 min
  3. Add the chicken & stir fir in pot for 2 mins
  4. add the stock & tin of tomatoes and puree
  5. Bring to the boil and add smoked sausage bay leaf, parsley, garlic, cayenne pepper, and paprika (adjust this 2 your liking) then add the veg & cook for 5 mins
  6. When its boiling add the long grained rice and cook until most of the liquid has reduced & the rice is cooked then add the shrimp cook for 3 mins and serve (adjust the liquid with stock or water until the rice is cooked ,and reduced)

    Tasty recipe. I'm indian and can usually take it hot. I didn't deseed the chilli, with 1tsp each of paprika & cayenne pepper was very hot. Maybe I will deseed the chilli next time. Recommended - yummy.

    Loved this. First made it for a football World Cup evening and have made it lots of times sine. I left out the shrimp due to a fussy eater in the family, but we all loved it. Gert lush! Would recommend this to anyone.

    Lovely! I've honed this after a few tries! First I fry the chorizo and pepper till well done then set aside and add with the prawns at the end because they go a bit yukky being boiled and you loose some of their delicious flavour. Plus I now leave out the celery. This makes loads so I half it and it plenty for 2 plus lunch the next day.
