Ingredients

  • 425ml rosé wine
  • 1 vanilla pod, split lengthways
  • 100g demerara sugar
  • 500g cherry

Method

  1. Tip the wine into a medium pan, then add the vanilla pod to the pan with the sugar. Bring to the boil, then reduce the heat and simmer until the sugar has dissolved.

  2. Stone the cherries if you want, or leave them as they are. Add to the pan and cook gently for 6 mins. Remove with a slotted spoon to a bowl. Increase the heat, then boil the liquid for 8-10 mins until slightly syrupy. Pour over the cherries and serve warm or cold in glass bowls.

Found a big bag of cherries in the bottom of the freezer (1kg) and so used a whole bottle of cheap rose wine and have ended up with the most unexpectedly delicious pudding! I didn't pit the cherries (don't have a cherry stoner), but no one seems to mind - we've been chanting "Tinker, tailor, soldier, sailor, rich man, poor man, beggar man, thief"...

I've had a bumper crop of cherries this year and have been trying all the cherry recipes I can find. This is delicious and a low calorie option to finish a dinner party. And it's even better the following day.
