Method

  1. Heat oven to 220C/fan 200C/gas 7. Heat a non-stick frying pan over a medium heat and add the oil. Cook the onions with the lid on for 10 mins, stirring every now and again, until soft and caramelised. Stir in the balsamic vinegar. Season well.
  2. Put the pizza base on a baking sheet. Spoon the caramelised onions over the base and top with slices of goat's cheese. Bake in the oven for 5-8 mins, until the goat's cheese has melted and the base is crisp.

'I love pizza, but had never made it with goat's cheese before - nor without a tomato sauce! The end result of the Cheesy onion pizza is surprisingly tasty. I might add some olives and sliced tomato next time.'

    Very nice and easy to make - we made this at the same time as the sausage pizza - I think a whole one of these would be a bit much to take on the the onion/goat's cheese front.
