Gooey school treacle sponge

20 minutes + 30 minutes in the oven or 7½ minutes

Method

  1. Butter a 1-litre baking dish, and dollop the syrup in the bottom. Put the butter and sugar in a food processor and blitz until pale. Beat in the eggs one by one, then the vanilla. Add the flour and pulse until just mixed. Scrape into the dish, on top of the syrup.
  2. Either cover with cling film and microwave on medium for 7 1/2 minutes or bake in the oven at 180C/fan 160C/gas 4 oven for 30 minutes until risen and golden. Serve with lashings of custard.

    It was great! The syrupy bit at the bottom is my favourite so I kept the recipe just the same and it was perfect! The buttery sponge goes so well with it!!

    Wonderful, golden and perfect on the top and sticky and sweet gooeyness on the bottom. Bang goes the diet as we all had seconds! Used the full amount of syrup, next time I might put in a spot more, but I do have a very sweet tooth :)

    I made this for lunch with friends today and served it with vanilla custard. It disappeared pretty quickly!! Everyone said it was really tasty. My husband said it could do with more syrup but he does have a very sweet tooth. I would definitely make it again - was very easy and quick and a lighter alternative to a steamed pudding.

    This is such an easy and tasty recipe, I think I might of over done it with the golden syrup, if you can! It was so nice and eventhough I was cooking tea I couldn't resist a spoonful or two to test it! I will definately be cooking this again.

    I ran out of golden syrup whilst making this so ended up with 4 tablespoons of syrup and 2 of maple syrup. It rounded out the flavour wonderfully. Sponge was very light too, all in all a delicious pudding - definitely needs custard.

    i personally have not cooked this recipe yet - i have it in my folder waiting - but my friend did when i went to hers for dinner and it is delicious. looked so easy to cook as well. It was quite sweet but still delicious.

    Yummy so quick and easy to put together from what I already had in the storecupboard, it was gone in a flash and my 5 year old cried when there wasn't enough for seconds! Didn't find it too sweet as others have - we didn't have any custard so served with vanilla ice cream. Will definitely make again and again.

    made this last night and it was a huge success, easy to make and really delicious i decided to bake in the oven however i must have got the timing wrong as it was not cooked through, so i then finished it off in the microwave.
