Nice as a side but a little bland for me personally.

This very simple and surprisingly nice recipe almost single handedly got me through my courgette glut this year (although I added balsamic vinegar)

The courgettes are not cooked?? They are raw?

Forgot to add that I also added Lardons and dijon mustard to the marinade to give a slight kick

Changed this a little as thought that courgettes alone would be tad bland. Added a little sweetcorn, quartered cherry tomatoes, finely diced red onion, red Kideney bean and pasta. Added a little salt and pepper to the marinade.
Was gtreat - and cooling in the hot weather...eventhe kids oved it (aged 3 and 6).
