Marinated courgette salad

Method

  1. Using a vegetable swivel peeler or mandolin, slice the courgettes into long thin ribbons and place in a shallow serving dish. Whisk the lemon juice with the olive oil in a small bowl and season generously.
  2. Drizzle over the courgette ribbons and leave to marinate for 15 mins before serving.

    Changed this a little as thought that courgettes alone would be tad bland. Added a little sweetcorn, quartered cherry tomatoes, finely diced red onion, red Kideney bean and pasta. Added a little salt and pepper to the marinade. Was gtreat - and cooling in the hot weather...eventhe kids oved it (aged 3 and 6).

    Forgot to add that I also added Lardons and dijon mustard to the marinade to give a slight kick
