  • 85g golden caster sugar
  • 300ml double cream
  • shortbread biscuits, to serve


  1. Mash most of the blackberries with the lemon juice and half the sugar. Whip the cream with the remaining sugar. Fold the whipped cream and blackberry mix together to make a mauve cream, then tip into a freezer container and freeze until set. Serve in scoops in glasses, with the shortbread and remaining blackberries on the side.

Love this so much. Made to use up some blackberries, but it is so good, I can see any berry going in to future mixes. Everybody who has tried it has requested the recipe. Perfect flavour with the edge of lemon to counter the huge richness of the cream.

Have made this a few times, once with strawberries instead of blackberries, and have loved it every time. So easy it's almost cheating and I found the balance of lemon in the recipe just to my taste. Yum!

It was fun to make, but when it came to eating, it was too lemony for me. I recommend using half, but was very nice otherwise.

Might try making with whipping cream next time, to see if it gets a softer set. This is a personal whim as It will be hard to improve on perfection!
