Ingredients

  • 2 tbsp olive oil
  • 1 fat red chilli, deseeded, then finely chopped
  • 2 rolls, split (we used ciabatta ) or 4 thick slices of bread
  • 70g pack of sliced chorizo or other spicy cured sausage
  • 50g bag of rocket
  • 100g goat's cheese, crumbled

Method

First mix the olive oil and chilli in a bowl. While the flavours mingle, toast the split rolls or bread. Top with the sausage, rocket and goat’s cheese, then drizzle over the chilli oil.

Mixed the olive oil and chilli together the day before I made these to let the flavours really infuse. Absolutely lovely, delicious and easy to make. Good for buffets or a starter when entertaining or a even a treat for yourself as a lovely lunch.

A great quick supper, I stuck mine under the grill for a moment before adding the rocket.

These were great, used chorizo. Had to top it off with balsamic vinegar, just to give it that extra.
