Ingredients

  • For the Sponge:
  • 3 Eggs
  • 75g Caster Sugar
  • 75g Self Raising Flour
  • For Filling (Optional - If making Victoria Sponge Version)
  • 100g Single Cream (I personally use Elmlea)
  • 100g Strawberry Jam

Method

    1. Preheat Oven to 170C/Fan 150C/ Gas 5. Place baking paper in a 7inch circular baking tin.
    2. Using an electric whisk, whisk together the eggs and sugar until it has tripled in size and is stiff. A test of this is to use the whisk to create a line on top of the mixture with the mixture and if it stays, then it is ready.
    3. Carefully fold in the flour, making sure to knock out as little air as possible so that the cake will rise well, pour the mixture into the tin and put into the oven for 10 minutes.
    4. (If making Victoria Sponge version) Create two of these cakes and leave to cool, whisk the cream ready.
    5. Once cooled, spread jam on one of the halves and then place the whipped cream on top. Then place the other half on top and enjoy - best served with a nice cup of tea!!

nice recipe! really simple and ended up with two sandwich sponges instead of one which a sandwiched together with yoghurt and blueberries. did take a lot of whisking which did not result in a stiff mixture. i was expecting something like a meringue mix so ended up whisking for 15 minutes. on the second time only did 5 and that worked fine. i was always told that if you had yolk in the egg white than the whites wouldnt whisk well or thicken up properly so i was pleasantly surprised that there was no egg separating needed!

surely it cant be fat free with eggs, single cream and jam tho???? or am i missing the point lol

10 minutes doesn't seem long enough. Isn't gas mark 5 more like 190C?

Taste amazing .... same recipe for swiss roll except it's not rolled up.

Tried this recipe twice now, absolutely fantastic, because it has no fat, you can eat more - well that is my theory!
The sponge was so light and fluffy, I used low sugar jam and half fat whipping cream to sandwich together.
This is a super favourite with all family.
