This is a lovely recipe. The sundried tomato really compliments the scrambled egg. It's our 'go to' lazy Sunday morning breakfast.

I used bell pepper and spring onion instead of tomato, first time i havent needed ketchup with my scrambled eggs!

This is a really nice alternative to normal scrambled eggs however, I used salad tomatoes instead and it was still a great breakfast!

This made a delicious Saturday brunch. I soaked the chopped sundried tomatoes in boiled water for fifteen minutes, rinsed them in cold then added them to the eggs with ground black pepper before cooking in the microwave (no salt needed). I served them on a wholemeal toasted roll spread only with a little pesto. Gorgeous and a nice healthy change from our usual cooked brekkie.

@try these, a VEGETARIAN diet is the exclusion of meat, whereas a VEGAN diet includes the exclusion of eggs and dairy products. So this recipe can be called vegetarian but not vegan.. The eggs were really good, although added some butter

I used one piece of toasted brown bread for this which was just as tasty and satisfying. It was quick to make, delicious and filled me up that I didn't get the usual cravings I have to fight before lunch!

Made the eggs with a little skimmed milk and S&P as always and added in some well done bacon chopped up with the fat cut off before grilling. Served with grilled mushrooms. Yum :) Way better than boring bacon and eggs on toast.

DE-LISCI-OUS!!! Must admit also did my eggs in the microwave with a little milk:) and didn't have any basil so used some cut chives, it was lush! A bonus that it's low fat!!

Couldn't be bothered to soak some sundried tomatoes, so used some cherry tomatoes instead, which made it a lovely summer breakfast.
