Method

  1. Scramble eggs without butter or cream, stir in chopped sundried tomato and torn fresh basil, and pile on toasted English muffin halves.

    Couldn't be bothered to soak some sundried tomatoes, so used some cherry tomatoes instead, which made it a lovely summer breakfast.

    DE-LISCI-OUS!!! Must admit also did my eggs in the microwave with a little milk:) and didn't have any basil so used some cut chives, it was lush! A bonus that it's low fat!!

    Made the eggs with a little skimmed milk and S&P as always and added in some well done bacon chopped up with the fat cut off before grilling. Served with grilled mushrooms. Yum :) Way better than boring bacon and eggs on toast.
