  • 6 courgettes (about 700 gm)

  • 2 handfuls rocket leaves
  • 60 gm plain flour
  • 1 tablespoon creme fraiche
  • 1 teaspoon salt

    Method

    • step 1

      Peel and grate courgettes on the largest holes of a grater into a colander. Let courgettes drain 30 minutes.
    • step 2

      Thinly slice the onion.
    • step 3

      Using hands, squeeze as much liquid from the grated courgettes as possible.
    • step 4

      In a bowl whisk eggs, stir in the grated courgettes, the sliced onion, rocket leaves, flour, creme fraiche and mix well to make a thick batter. Season.
    • step 5

      Heat a non-stick frying pan and fry spoonfuls of the batter mix, cook pancakes 2 to 3 minutes on each side, or until golden and cooked through, transferring pancakes to a plate.

    I didn't peel courgette and added plain yogurt as I didn't have creme fraiche. Also only left to rest for 15 mins. Worked out really nice...the whole family loved it:) Thank you.
