Rocket and Courgette pancakes

Light and fluffy, these courgette pancakes are the perfect meal of a warm summer day.

- 6 courgettes (about 700 gm)
- 1 red onion
- 2 egg
- 2 handfuls rocket leaves
- 60 gm plain flour
- 1 tablespoon creme fraiche
- 1 teaspoon salt
- pepper

Method
step 1
Peel and grate courgettes on the largest holes of a grater into a colander. Let courgettes drain 30 minutes.step 2
Thinly slice the onion.step 3
Using hands, squeeze as much liquid from the grated courgettes as possible.step 4
In a bowl whisk eggs, stir in the grated courgettes, the sliced onion, rocket leaves, flour, creme fraiche and mix well to make a thick batter. Season.step 5
Heat a non-stick frying pan and fry spoonfuls of the batter mix, cook pancakes 2 to 3 minutes on each side, or until golden and cooked through, transferring pancakes to a plate.
