ANZAC biscuits

These cookies are a traditional Australian recipe. These were sent to the anzac's while they fought at Gallipoli, where my great great grandfather served for his country.

Method

  1. preheat oven 180C / 350F. mix together flour, oats, coconut and brown sugar
  2. melt butter and golden syrup in the microwave. Mix the mix bicarbonate of soda with the boiling water and add to the melted butter and Golden Syrup.
  3. Pour the liquids into the dry ingredients and mix well.
  4. roll spoonful by spoonful of mixture, about the size of a walnut shell and place onto an oven try lined with baking paper. leaving space again between dollops to allow for spreading.
  5. press dollops down with a fork to flaten and proceed to bake for 15-20 minutes, Cool on a wire rack and seal in airtight containers.

    Dead easy yet dead gorgeous. For info - 1 cup = 250ml Its a bit odd as 'cups' refer to volume but using the conversion above it worked a treat. The biccies didnt take long to disappear. Recommend these . . . .

    mmm nice, made 12 will make more next time, info 1 cup= 250 ml, was a help, worked out well, thanks, didnt use golden syrup used maple syrup, loved ever bite

    Lovely recipe, however, I found that the biscuits started to burn at around 8 minutes. I would definitely recommend that people keep a close eye on them!

    *cough* Australia AND New Zealand (2011 Rugby World Cup Winners). My Grandfathers also recieved golden syrup tins of ANZAC biscuits which we have every year on ANZAC day. I use brown sugar in stead of white sugar and they are almost caramel. Enjoy :D
