Easy and delicious. I added some pancetta this time, and served one half with pasta. The next day had it with jacket potatoes. Needs some extra seasoning, and if serving as main dish some extra grated cheese or beans etc.

What a winner! Easy prep, looks like a whole other course but it's a 'side'!! Impressive.

I have been making this for a long time (without knowing it was Tomato & Courgette Stew) and I usually add some cooked Gnocchi (3 mins) to it, grate cheese over and brown under the grill - really tasty & quick! Have also added cooked chicken, prosciutto and small sausage meatballs - just throw in what you fancy at the time!

I made this and served it with pasta. A low fat and low calorie dish, just the thing if you are trying to loose some weight!

Enjoyed this recipe but added a tin of kidney beans and teaspoon of chopped chilli to give it a bit more bite and spice it up a bit - worked well

I didn't have courgettes so I made with a medium eggplant... it was delicious (but I added a Tuscan season I had and a bit of red pepper)
