Salmon with sweet & sour red onions

Method

  1. Heat 1 tbsp olive oil in a small frying pan, add the garlic and onion and cook for 5-10 minutes until golden and caramelised. Remove from heat, add vinegar, zest, honey and seasoning and whisk until syrupy. Return to heat and cook for a few minutes until the onion is sticky.
  2. Grill or fry the salmon for 3 minutes each side. Spoon over the onions and scatter mint leaves over. Serve with salad.

    Loved it! Of course the quality of the salmon used helps. Good enough for guests but quick enough for midweek. Definitely one to repeat!

    HAVE MADE THIS A FEW TIMES. THE ONIONS ARE VERY DELICIOUS, SO YES, I DO PLENTY. BALANCES WELL WITH THE SALMON. THE LEMON ZEST IS A MUST! I'VE ALSO TOPPED CHICKEN BREASTS WITH THE ONION RELISH - WORKS WELL! IS A FAMILY FAVORITE!

    Loved it! Doubled the onion, excellent suggestion. As an extra bonus I found out that cooking fresh fish is not that difficult. Thanks for an excellent recipe with clear directions.

    Made this for my book club for 7 people. Absolutely superb you can prepare the onion mixture in advance and just heat through. I baked the salmon in the oven for 20 minutes with a little wine which was much easier for me under the circumstances. Would definitely make it again - do add lots of extra onions. I did 4 large red onions which was superb.

    I was very sceptical to the claim of adding garlic with the onions and unfortunately my fears were realised as the garlic was burning and the onions were only just caramalised - perhaps the onions wasnt chopped finrly enough - I will have to read the ingredients more closely next time! I will admit I should have thought this through, and with me being a bit cheap and using raspberry vinegar it wasnt as good as I hoped, however if the garlic hadn't burnt I am sure it would turn out better.

    Lovely recipe -- the salmon is simple and easy to cook and so are the sweet and sour onions. Impressive and tasty meal in minutes. I serve with a salad of romaine hearts with lemon and olive oil dressing. O and I dont use the mint.
