Ready in 20 minutes and low fat, this fish dish is great for a Monday night when you'd rather be on the sofa than in the kitchen

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 400g can chopped tomatoes
  • 1 heaped tsp light, soft brown sugar
  • few sprigs thyme, leaves stripped
  • 1 tbsp soy sauce
  • 4 cod, fillets (we like No Catch) or another white flaky fish, such as pollack

  1. Heat the oil in a frying pan, add the onion, then fry for 5-8 mins until lightly browned. Stir in the tomatoes, sugar, thyme and soy, then bring to the boil.
  2. Simmer 5 mins, then slip the cod into the sauce. Cover and gently cook for 8-10 mins until the cod flakes easily. Serve with baked or steamed potatoes.

Brilliant............garlic, a few drops of tabasco and a handful of green and black olives (unstoned) and a stonking good Chablis......heaven on earth.

Lovely dish, I added chilli and garlic...was still lacking a little something so will tweak next time but overall was great.

I make this regularly, it's great. Really quick, simple and healthy. I do add extra thyme and garlic (as I do in most things) and I've added chilli a few times to up the flavour - it's lovely! :)

I'm not the biggest of fans of tomatoe sauces, though do eat them occasionally. I thought I would give this recipe a try based on the comments and the fact that it looked like an easy and healthy dinner. Unfortunately, I didn't enjoy this meal. I found the tomatoes too overpowering, even the increased amount of thyme did not help. The fish itself was bland after 'scrubbing off' the sauce so I will not be giving this another chance.

Made this for the mother-in-law, and it went down a treat. Really tasty dish, highly recommend you give this one a try.

defrost and microwave? or boil in the bag I froze it in?

made this for tea tonight and loved it, added extra onion and some paprika and crushed chilli, used 2 tins of tomatos as fish was frozen and thought it might reduce to much with 1 tin. served with rice and green beans. really really yummy. empty plates all round :)

This is absolutely gorgeous. I like a bit of spice and so added two chilli's to the onions when frying with some dried thyme. It gave the dish an extra kick. Served with boiled baby potatoes and broccoli . A new favourite.

This dish was awesome so simple but beautiful, I have cooked it 3-4 times but unfortunately I now find it too sweet for my taste buds! so have stopped!

This does exactly what it says on the tin! It is quick - easy and cheap. I really didn't want to spend long in the kitchen, so this was the perfect meal, and fairly healthy too. Served with new potatoes and peas. I added spices and chillies to the sauce (as I do with most things) but might try adding red wine next time too.

It was super easy, but super bland. Maybe with some chili and garlic it might be better.

Entered "cod, tomatoes" into your search box and this was top of the list. Very easy and quick to make and tasted delicious. An added bonus - very little washing up. Think this will become a regular in our house!

This dish was simply divine. Added chorizo and black olives as per another recommendation and served it with sweet potato mash, absolute hit! It'll be on the menu for a second time tonight.

I recently made this dish, it was delish, i added Paprika and Peppercorns, i also used frozen peas and sweetcorn and only 1 tin of chopped tomatoes. served with a fresh naan - oh and i cooked it with a full red chilli pierced then removed before serving !!! will be making again..

Absolutely delicious with a few changes which made the dish; added a teaspoon of smoked paprika, chilli flakes & crushed garlic to the softened onion. Used a tin of cherry tomatoes instead of chopped & added a tablespoon of tomato purée. A definite hit with the hubby, served with steamed new potatoes & green beans.

I found the dish a little bit bland - i think if i cook it again, I will add some hot paprika and maybe some other bits and pieces. It was just missing something.....

Great recipe, dead easy and tasty too. Had it with carrots broccoli and mask. Will have it again :-)
